XFOOD SERVICE XSUSTAINABILITY

The O.P.PE.F.S. is a product organisation recognised at European level. It is dedicated to the fishing of autochthonous clams (scientific name 'chamelea gallina') in the central part of the Adriatic Sea, on sandy coastal seabeds in the maritime districts of Ancona and Pesaro. The fishing grounds of the local fleet are constantly monitored and classified by the regional health services. The marketed clams are larger than 22 mm in diameter and smaller specimens are discarded alive, so this fishery is considered to all intents and purposes sustainable.
